Recipe Parsley tagine (or maadnous tagine)

Ingredients :
- 300 g of beef or lamb or chicken
- 2 finely sliced onions
- 1 bunch of parsley
- 6 eggs
- 150 g of cheese cut into small cubes
- ½ cup olive oil
- 2 tbsp. teaspoon tomato paste
- ½ cup breadcrumbs
- ½ tsp. teaspoon turmeric
- ½ tsp. Ras-el-hanout coffee
- Salt and pepper
Instructions :
- Cut the meat into small cubes.
In a small saucepan, brown the sliced onions and tomato paste.
Add the meat, ras-el-hanout, turmeric, pepper and salt. - Cover with water and cook over low heat for about an hour (until the meat becomes tender). Let reduce and remove from heat.
- Pour the mixture into a large container, add the finely chopped parsley, cheese, eggs and breadcrumbs.
- Mix everything well and transfer this mixture to a buttered mold.
- Place in the oven and cook over medium heat at around 200° for around 30 minutes.
