Chicken Stuffed Zucchini Recipe
Ingredients
- 1 large zucchini
- 1 onion
- 2 tbsp. tablespoon of tomato coulis
- 2 chicken breasts
- 1 clove of garlic
- 50 g of parmesan
- olive oil
- salt pepper
Preparation

Wash the zucchini well and cut it in half lengthwise. Dig lightly with a spoon, being careful not to puncture the skin.

Reserve the zucchini flesh and steam both halves for 10 minutes.

Meanwhile, brown the sliced onion and the chopped garlic clove in a pan with a drizzle of olive oil. Add the sliced chicken breasts, zucchini flesh then pour in the tomato coulis.

Cook for ten minutes over medium heat, stirring occasionally.

Salt, pepper and stir. Stuff the zucchini halves with this preparation then sprinkle with parmesan.

Bake for 5 minutes at 200°C in grill position.
