Our revisit to the students’ favorite dish: cordon bleu
O cordon bleu! Why are you a cordon bleu?
To you my dear friend, my faithful companion, my refuge…
For all the times I bought you ten for €10
For all the times I paired you with bolo pasta,
For all the times my roommates asked me if I was planning to cook for you again,
For all the times my parents begged me to eat something else for my health…
Well no ! I refuse, I love you too much…
However, it is true that I am starting to have a stomach ache and realize that one euro for cordon bleu does not bode well for what we put into it.
So for you and for everyone else, here is my homemade recipe, ultra quick (less than taking it out of the fridge and grilling yourself for 2 minutes on each side on the hot pan I admit) but much more tasty and delicious (yes yes) !
Ingredients for 2 people:
- 2 fairly large chicken fillets
- two slices of white ham
- cheese of your choice (recommendation: Emmental, Gruyère or my favorite: Comté)
- Flour
- 2 eggs
- Breadcrumbs
Preparation :
Lay out a chicken fillet, flatten it a little if necessary.
Then fold the white ham onto one side of the chicken fillet, taking care that it does not extend beyond the edges of the chicken fillet.
Then add the cheese to the desired quantity (feel free to indulge yourself).
Then, if you have not grated 1kg of cheese on the ham either, you will have to succeed in closing the cordon bleu in two by folding the fillet on itself.
Press the edges of the chicken to close it well; you can stick a toothpick on the edge to secure the closure.
Then dip your cord in the flour, then in the beaten eggs and finally cover completely with breadcrumbs.
The cordon bleu is now ready, you can do as usual and cook it on both sides in the pan after adding fat, however you should cook each side a little longer, first over medium heat in order to cook the chicken well then you can increase the heat to grill the cordon bleu a little.
