“Good meat”: Cyril Lignac shares his recipe for beef tartare with candied vegetables

In addition to delighting millions of French people every evening in a brand new express version of the show Tous en Cuisine, Cyril Lignac also shares recipes on the airwaves of RTL. This Monday, September 18, 2023, the famous chef focused on an emblematic dish of gastronomy: beef tartare. “There are two ways to do it, either with a knife (…) or you chop the meat and mix it with the sauce you want”explains the juror Best Pastry Chef. To enhance this “very simple and very good tartare”, Cyril Lignac chose the “savora, this condiment a bit like mustard with lots of spices”. Here is his recipe.

Preparation time: 10 minutes

Cooking time: 20 minutes

  1. After preheating the oven to 200°C, arrange the small vegetables on a large sheet of aluminum foil. Season them with fleur de sel and freshly ground pepper. Then, drop the butter into small pieces and sprinkle with sugar. Close the sides by folding the second part of the sheet to form a wallet, when you close the fourth side, pour in a little water. Place the vegetables on a baking tray and cook everything in the oven for 20 minutes.
  2. Then cut the meat into small cubes and place them in a salad bowl. Add ¾ of the chopped herbs, the capers and the shallot. Leave them aside. In a second salad bowl, place the egg yolk with the savora, mix and whisk the mixture while adding oil. Incorporate spoonfuls of savora mayonnaise into the meat.
  3. Place the cookie cutter on the plates. Place the meat there and flatten it slightly. Take the vegetables again, then cut them into pieces. You can add them to meat. Add a few coriander and parsley leaves. All you have to do is enjoy!
