An original recipe for homemade tacos where the tortilla is made from grated carrot. It is then topped with chicken marinated in yogurt. Find the complete recipe on 750g ➡ or below Ingredients (for 6 pieces): For the marinated chicken: – 600 g of chicken breasts chicken – 1 organic lime (zest and juice) – 360 g of Greek yogurt – 1 drizzle of olive oil – 2 pinches of Espelette pepper – 1 clove of garlic – 1 cm of fresh ginger – 1/4 bunch of fresh coriander – Salt & Pepper For the carrot tortillas: – 400 g of carrots – 80 g of grated Comté cheese – 50 g of flour – 2 eggs – 2 pinches of salt – 2 pinches of Espelette pepper – 1 tbsp .vs. garlic powder For the yogurt sauce: – 120 g of Greek yogurt – 1 drizzle of olive oil – 2 pinches of Espelette pepper – 1/2 freshly squeezed lime – 1 tbsp. fresh coriander – Salt & Pepper For assembly: – 1 handful of lamb’s lettuce – 2 tsp. cooked corn – 1 handful of raw red cabbage – 1/2 lime Preparation: Marinated chicken: Cut the chicken breast into small cubes. Put them in a salad bowl. Add the Greek yogurt, lime zest and freshly squeezed juice. Salt, pepper, add the Espelette pepper, grated garlic and grated ginger. Add the chopped coriander. Mix everything, cover with cling film and leave to marinate in the refrigerator while preparing the carrot tortillas. The carrot tortillas: Grate the carrots with a wide-toothed grater. Pour them into a salad bowl. Add salt, garlic powder and Espelette pepper. Add the grated Comté cheese. Add the sifted flour. Add the eggs. Mix everything with a fork. Preheat the oven to 200°C (fan). Place a sheet of baking paper on the oven tray. Oil the paper with a drizzle of olive oil. Using a spoon, make a pile of 2 spoonfuls of carrot mixture. Using the back of the spoon, flatten the pile to form tortillas of the size of a small hand. Repeat the operation until the preparation is used up (plan two batches, because the tortillas will not all fit on the same plate). Smooth the edges of the tortillas. Place in the oven and cook the tortillas carrots 15 minutes on one side. Then turn them over with a spatula, cook them for 2 to 5 minutes on the other side. Remove the baking tray from the oven and transfer the tortillas to a flat plate. Let them cool before garnishing them.The yogurt sauce:Put the Greek yogurt in a bowl, add the salt, pepper and Espelette pepper.Add the olive oil, lime juice freshly squeezed and chopped coriander. Mix everything together, set aside. Cooking the chicken: Heat a drizzle of olive oil in a non-stick pan. Add the chicken with its marinade, cook for 20 minutes, until the marinade is absorbed and the chicken grilled.Assembling the tacos: Arrange the tortillas flat on the work surface. Spread them with yogurt sauce. Add a few lamb’s lettuce leaves. Add marinated chicken and drained corn. Add red cabbage cut thinly into strips. Add a little yogurt sauce, finish with a few drops of lime juice. Arrange the tacos gradually on a plate, one next to the other so that they hold.
