The easy, seasonal recipe for pumpkin and leek soup

To make this recipe, you will need:

  • 3 leeks
  • 1.5 kg of pumpkin
  • 5 cloves of garlic
  • 50g butter
  • 1 chicken or vegetable stock cube (for vegetarians)
  • salt and pepper

Step #1 : Wash the leeks carefully and slice them.

Step No. 2: Peel the pumpkin and cut it into small cubes.

Step No. 3: In a casserole dish, melt the butter (without browning) and add the sliced ​​leeks. Sweat them for a few minutes while stirring them so that they don’t stick.

Step No. 4: Add the diced pumpkin, garlic, 1.5 liters of water and the stock cube of your choice (chicken or vegetarian). Boil the water.

Step #5 : Let the mixture cook for around 30 to 45 minutes over medium heat.

Step No. 6: Mix the vegetables with a little broth to obtain a velouté.

Step No. 7: Add salt, pepper and a little light cream if desired (this option is optional).
