  • 900 g tomato pulp

  • 500 g of spaghetti

  • 250 g of blond lentils

  • 10 cl of red wine (optional)

  • 1 carrot

  • 1 onion

  • 1 stalk of celery

  • Parsley

  • Olive oil

  • Salt

  • Pepper

To note – If children or people who do not drink alcohol are participating in the meal, simply leave out the red wine.

1. Vegetarian bolognese sauce – Once the lentils have been rinsed in clean water, cook them in boiling water for around twenty minutes before draining them. For 5 minutes, in a stewpot, brown the diced onion and carrot, with a little olive oil. Then add the red wine, stir, add the tomato pulp and lentils then let everything simmer for 15 minutes.

3. Tasting – You are free to mix the pasta with the sauce so as to coat the spaghetti with bolognese, or simply place the sauce next to the pasta. To finish, sprinkle a little chopped parsley, season to your liking before serving, and that’s it!
