When cooking your potatoes to accompany your winter raclettes, you may have asked yourself this question: should you cook them with or without skin. And it is true that in this matter, there are two schools. Those who prefer to remove it before to avoid burning their fingers afterwards and those who keep it on for better hold when cooking.

Often, the potato crystallizes a lot of bad preconceptions about its nutritional benefits. However, this starchy vegetable contains protein, fiber, vitamins and minerals. The potato is also rich in starch, which makes it an ally for getting sleep. Preserving your skin can therefore also be a plus in the nutritional benefits it can provide. To put an end to this debate, Alexandra Retion, dietician-nutritionist, author of “My low GI desserts” (ed. Leducs), interviewed by the media “Top Health,” decided to answer this thorny question.

According to her, it is much more interesting to cook our potatoes with the skin on: “It is better to cook the potatoes with their skins and steam (for the vitamin C which is water soluble and risks being completely eliminated if they are cooked in water)”, estimates Alexandra Retion. “This will allow you to retain as many nutrients as possible, which are mainly lodged in the skin. On the other hand, remember to clean your potatoes well before. You can soak them for a few minutes in water with a few drops of white vinegar. Rinse then cook.

If we hate the chore of peeling, “you can eat certain categories of potatoes with the skin,” explains Alexandra Retion. In this case, it is better to favor products from organic or sustainable agriculture.

Now that you know that leaving the skin on is beneficial, it’s important to know how to properly store your potatoes so they stay fresh longer. The ideal is to store them in a cool, dark place, preferably in a wicker basket or canvas bag, which allows good air circulation. Avoid storing them next to onions, as the potatoes absorb their odor. In an apartment, the vegetable drawer in the refrigerator is often a good option. Additionally, be sure to inspect them regularly and remove any that show signs of germination or rot to avoid spoiling them.
