Offering the guarantee of healthy and sustainable food, organic beef, veal and lamb can be enjoyed in tasty recipes, to the delight of our taste buds.

Pea cream and organic beef meatballs with mint

Ingredients : 700 g of organic ground beef, 1 bunch of mint, 1/2 bunch of coriander, 600 g of frozen peas, 10 cl of cream, 50 g of ricotta, 15 cl of chicken stock, 4 tbsp. tablespoon of olive oil, salt and pepper.

Remove leaves, wash and chop the mint. Mix it with the organic ground beef, salt and pepper. Form small balls and keep them cool.

Heat half of the olive oil in a casserole dish. Sear the still frozen peas over high heat and cook for 5 minutes. Add the chicken stock and bring to the boil. Add the cream and ricotta. Cook for 5 minutes and blend in a blender. Adjust the seasoning if necessary and keep warm.

Meanwhile, heat the remaining olive oil in a pan and gently brown the beef meatballs for a few minutes over moderate heat. Wash and chop the coriander.

Serve the pea cream with the beef meatballs and chopped coriander.

Organic grilled sirloin with zucchini

Ingredients : 1 slice of organic sirloin of 800 g, 5 small zucchini, 1 lemon, 2 tbsp. tablespoons of Provence herbs, 1 tbsp. tablespoons of Dijon mustard, 6 tbsp. tablespoon of olive oil, salt and pepper.

Prepare a barbecue with hot embers. Squeeze the lemon juice. Wash and cut the zucchini into thin sticks and marinate them with lemon juice, 3 tablespoons of olive oil, salt and pepper.

Salt and pepper the organic sirloin. Cook it for 5 to 6 minutes on each side over the hot embers and let it rest for 8 minutes, turning it from time to time.

Meanwhile, mix the mustard, herbs de Provence and the rest of the oil.

Brush the organic rib-eye steak with herb mustard before cutting it into thick slices.

Serve the organic sirloin steak hot with the raw zucchini marinated in lemon. A recipe to enjoy hot and cold.

Organic lamb pan with cherry tomatoes and basil

Ingredients : 600 g of organic leg of lamb cut into cubes, 20 cherry tomatoes, 1 bunch of basil, 2 cloves of garlic, 50 g of pine nuts, 4 tbsp. tablespoons of olive oil, salt and freshly ground pepper.

Pluck the basil leaves, wash and dry it, peel the garlic and squeeze the cloves, salt and pepper the lamb cubes.

Heat a pan with the oil, quickly brown the pine nuts and set aside.

In the same pan, brown the organic leg of lamb cubes for 1 minute over high heat and on all sides, add the garlic and tomatoes, cook for 10 minutes over low heat, stirring gently, add the pine nuts and, remove from the heat , add the basil.

Serve the pan-fried organic lamb with ratatouille or fresh pasta.

Suggestion: replace the cherry tomatoes with olives and fresh grapes.

Organic lamb grills with barbecue sauce

Ingredients : 8 second organic lamb ribs, 1 lightly defatted lamb breast, 2 cloves of garlic, 5 sprigs of fresh thyme. Barbecue sauce: 5 tbsp. ketchup, 4 tbsp. soy sauce, 3 tbsp. tablespoons of liquid honey, 2 tbsp. tablespoon of sunflower oil, salt and freshly ground pepper.

Peel the garlic and chop it, strip the thyme and cut the breast into pieces. Arrange the ribs and pieces of lamb breast in a dish, add the garlic and thyme, pour in the oil and leave to marinate for at least 1 hour.

Prepare the barbecue sauce: mix the ketchup, honey and soy sauce in a salad bowl and set aside at room temperature.

15 minutes before serving, preheat the oven to 180°C (Thermostat 6).

Season the lamb with salt and pepper and brown it on both sides over high heat in a large, heavily heated non-stick frying pan. Mix the marinade and the barbecue sauce, place the lamb in a large dish, cover it with sauce, cook it for 8 to 10 minutes in the oven, turn it when it begins to caramelize and continue cooking for 10 minutes, basting regularly. with the sauce.

Serve the ribs and pieces of lamb breast drizzled with barbecue sauce and accompanied by fries.

Suggestion: replace grilled meats with skewers.
