It’s a piece that we often neglect: the pork shank, which is also called the ham. It is a tasty and very tender meat (this is often the case for pieces close to the bones), whose price is very reasonable: around 15 euros per kilo for very good quality pork. In the recipe we offer you, this shank simmers slowly in the oven, which does not require you to stay in the kitchen during the cooking time.

The steps of the recipe

Peel and slice the onion.
Preheat the oven to 200°C.
Place the shank in a large gratin dish with the onion and bay leaves around it, drizzle with oil, sprinkle with thyme, salt and pepper. Pour a little water into the dish.

Bake the dish for 1 hour then lower the temperature to 175°C. And cook for another 1 hour, adding a little water and basting the shank with sauce.

Wash the seeds and add them around the meat with the garlic and olives.
