Jamie Oliver’s Crispy Paprika Chicken

  1. Preheat the oven to 200°C (th. 6-7).
  2. Scrub the potatoes and cut them into 3cm pieces. Cut the peppers into roughly the same size pieces, removing their seeds and stems. Place the whole thing on a large roasting tray and mix it with 1 tbsp. tablespoons of olive oil, a little sea salt and black pepper. Using a large, sharp knife, carefully cut the chicken in half. Top it with 1 tbsp. tablespoon of olive oil and 1 tbsp. of red wine vinegar, then rub it all over with the paprika and a pinch of salt and pepper.
  3. Place the tray containing the vegetables at the bottom of the oven, place the chicken halves, skin side up, on the rack above and roast for 40 minutes.
  4. At the end of cooking, rub the thyme with a drizzle of olive oil.
  5. Remove the tray containing the vegetables from the oven, shake it well, then remove the leaves from half of the sprigs of thyme and distribute them on top. Place the remaining thyme sprigs over the chicken and roast for a further 5 minutes or until cooked through, then serve.
