How is oil used in cooking?

For cooking, there are a multitude of oils, each having its own properties and uses. Overview of the use of oil in the kitchen.

At the beginning of the history of oil, there is the olive tree. Sunflower oil, thanks to its composition, also helps reduce (bad) cholesterol levels.

The use of rapeseed, peanut and walnut oils in cooking

Rapeseed oil is rich in essential fatty acids and has an excellent balance between omega-3 and omega-6, which makes it a very beneficial oil for health. It is recommended to use it only cold, as a seasoning for salads, for example. Its fairly neutral taste also makes it an oil appreciated by most people. Peanut oil, on the other hand, contains the highest proportion of saturated fatty acids (19% on average). As for its use, this very heat-stable oil makes it perfect for frying. Walnut oil is the oil of gourmets par excellence: also rich in omega-3 and 6, it enhances seasonings and goes very well with ingredients such as mushrooms or endive.

Other oils frequently used in cooking

Coconut oil is characterized by its richness in saturated fatty acids : these are short fatty acids which quickly provide energy, without presenting any cardiovascular risk. On the other hand, this oil does not contain omega-3, which makes it very heat stable. Its solid consistency is comparable to that of Végétaline®, it is therefore ideal for frying. However, you have to like its slight coconut flavor to use it for other uses, such as cooking vegetables. Linseed oil contains more than 50% omega-3but it is characterized by a taste often described as “bad”… To reduce its taste, it is common to combine it with other oils, using a mixture composed of 1/3 linseed oil and 2/3 olive oil, for example.
