Last night at 11 pm, I found myself in a dilemma. I had just frosted a piece of cake but realized that no one would be able to eat it until at least 8 am the next day. Most people don’t eat cake for breakfast, so it would probably be closer to noon.

I had made this frosting before, but always served it on the same day. I wasn’t sure what to do since cream cheese is typically kept in the fridge, but cake is usually kept on the counter.

To be safe, I decided to refrigerate it. This morning, I reached out to Jan Moon, our local cupcake expert who used to work in the Cooking Light Test Kitchen. She now runs the successful Dreamcakes Bakery in Birmingham and has written a book on cupcakes for Southern Living.

Here’s what I learned from Jan:

Typically, a cake can be kept on the counter for 2-3 days and in the fridge for 5-6 days.

If you plan to eat the cake within the next day or two and your kitchen stays around 70 degrees or cooler, it should be fine to leave it on the counter, even with cream cheese frosting. So, if you make the cake the day before you plan to share it, it’s okay to go ahead and frost it. In fact, Jan recommends doing so because the icing helps keep the cake moist.

However, if your kitchen is hot and humid or if you plan to eat the cake over the course of a week, it’s best to keep it in the fridge.
