Fans of home cooking know it well: a stock cube is not worth good homemade chicken stock! Here’s how to make it yourself with Diego Alary’s easy recipe.

To wet a risotto, prepare a stew or cook vegetables for a soup, chicken stock can be used in all sauces in cooking! It brings depth and that little taste of coming back to your recipes. Not only is homemade chicken stock much more interesting from a taste point of view than a stock cube, but it is also better for your health! Moreover, you can absolutely freeze it to keep it longer and always have it ready to pounce! Here is the recipe and advice from chef Diego Alary to learn how to make chicken stock like a chef.

The ingredients to make chef Diego Alary’s chicken broth

Here, the chef uses chicken carcasses with the flesh still raw on them, but if you use the carcasses from your roast chicken from the day before, it’s even better!

  • 2 poultry carcasses + 2 wings
  • Water
  • 1 pinch of salt
  • Mill pepper

For the aromatic garnish:

  • ½ leek, cut into large slices
  • 1 carrot cut into 4
  • 2 stalks of celery, cut into slices
  • 2 button mushrooms cut into 4
  • 2 peeled garlic cloves
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 2 bay leaves

The steps to making chicken stock from chef Diego Alary

Get a large saucepan, a sieve or strainer, a spider and a large salad bowl.

  1. Place the poultry carcasses and wings in the pan then wet with cold water to the heightadd salt and pepper.
  2. Heat until the water begins to simmer. At this stage, skim off the residue that forms on the surface using a spider.
  3. Add all the ingredients for the aromatic garnish and simmer over low heat for about 2 hours. This is the time necessary for the broth to concentrate in taste.
  4. At the end of cooking, pass the broth through a sieve by transferring it to the salad bowl.

To give yourself a little regressive pleasure, cook shells or Chinese noodles by adding a stick of lemongrass and fresh coriander ! Otherwise, let the excess cool and freeze it in an ice cube tray!
