Croque monsieur with chicken and béchamel

Improvise a very gourmet meal with this tasty chicken croque monsieur recipe! Super simple to prepare, you will delight the taste buds of everyone at the table.

The advantage of the croque-monsieur is that it can be infinitely varied! And even if we love the classic béchamel and ham, we can also treat ourselves to lots of vegetarian or non-vegetarian recipes. We present to you a new croque-monsieur that is very easy to prepare with chicken and béchamel flavored with Provence herbs. A little (a lot) of cheese and voila! It’s super simple and quick to make, ideal for a gourmet dinner without the hassle.

Croque-monsieur recipe with chicken and béchamel


  • 2 chicken fillets
  • salt pepper
  • olive oil
  • For the béchamel:
  • 30g butter
  • 30 g of flour
  • 400 ml of milk
  • Herbs of Provence
  • 150 g grated cheese
  • 8 slices of sandwich bread



Salt and pepper the chicken on both sides. In a frying pan with a drizzle of olive oil, brown it for a few minutes on each side. The chicken should be nicely browned.


Meanwhile, prepare the béchamel: melt the butter in a saucepan and add the flour. Pour in the milk little by little while mixing and allow the béchamel to thicken.


Once the béchamel is thick, remove from the heat then add salt, pepper and herbs de Provence (around 1 tablespoon, but adjust according to your taste). Add a handful of grated cheese and let it melt.


When the chicken is cooked and well seared, cut it into thin slices. Return the slices to the frying pan (off the heat), just to soak them in the cooking juices.


Proceed to assembling the croque-monsieur: spread a little béchamel on half of the slices of sandwich bread. Add pieces of chicken and a little cheese.


Close with a slice of sandwich bread and spread béchamel on top then sprinkle with grated cheese. Bake at 180°C for around ten minutes to brown the croque-monsieur.
