coconut milk, chicken and mushrooms

INGREDIENTS

2 chicken thighs (about 225 g / 1/2 lb total), skin and bones

2 stalks of lemongrass, tough leaves removed, cut into thin slices

2.5 cm (1 in) fresh ginger, finely chopped or grated

Grated zest and juice of 1/2 to 1 lime, or to taste

1 good handful of fresh cilantro, finely chopped stems and whole leaves

250 ml (1 cup) broth

1 can of 400 ml coconut milk

400 g (14 oz) shiitake mushrooms or oyster mushrooms, cut into slices

5 ml (1 tsp) hot pepper flakes, or to taste

15 ml (1 tbsp) fish sauce

15 ml (1 tbsp) tamari

Sea salt

PREPARATION

1. In a medium saucepan, place the chicken, lemongrass, ginger, lime zest and cilantro sprigs. Pour in the broth, cover and bring to the boil. Reduce heat and poach chicken for 20 to 22 minutes, until cooked through. Remove the chicken from the pan and set aside in a bowl.

2. In the saucepan, add the coconut milk and mushrooms, half of the chili flakes and the fish sauce. Bring to a boil. Reduce heat and simmer for 6 minutes. Meanwhile, using 2 forks, roughly shred the cooked chicken.

3. Add the shredded chicken to the pan, then the tamari, lime juice and a little salt. Divide the soup into bowls. Sprinkle each serving with coriander leaves and remaining chili flakes.
