Recipe Parsley tagine (or maadnous tagine)




Ingredients :

  • 300 g of beef or lamb or chicken
  • 2 finely sliced ​​onions
  • 1 bunch of parsley
  • 6 eggs
  • 150 g of cheese cut into small cubes
  • ½ cup olive oil
  • 2 tbsp. teaspoon tomato paste
  • ½ cup breadcrumbs
  • ½ tsp. teaspoon turmeric
  • ½ tsp. Ras-el-hanout coffee
  • Salt and pepper

Instructions :

  1. Cut the meat into small cubes.
    In a small saucepan, brown the sliced ​​onions and tomato paste.
    Add the meat, ras-el-hanout, turmeric, pepper and salt.
  2. Cover with water and cook over low heat for about an hour (until the meat becomes tender). Let reduce and remove from heat.
  3. Pour the mixture into a large container, add the finely chopped parsley, cheese, eggs and breadcrumbs.
  4. Mix everything well and transfer this mixture to a buttered mold.
  5. Place in the oven and cook over medium heat at around 200° for around 30 minutes.
