Beef tongue, spicy sauce from Morgane Alzérat

Ingredients for 1 beef tongue of 1 to 2 kg

  • 1 beef tongue
  • 2 glass of white vinegar
  • 1 good glass of white wine (preferably dry)
  • 1 onion
  • 1 tablespoon of 4 spice mix
  • 1 bouquet garni
  • 3 beef stock cubes
  • salt
  • pepper
  • 2 large shallots, chopped
  • 60g of butter
  • 4 tablespoons of flour (optional for those with gluten intolerance)
  • 120 gr of sliced ​​gherkins
  • 1 large blended tomato or 1 tablespoon of tomato paste
  • 1 teaspoon of mustard (preferably whole-grain mustard)
  • 2 squares of sugar (1 tablespoon if powdered)

– Soak the tongue in clean water the night before the recipe.

– In a pot or a large saucepan, immerse the tongue and clear water with 1 glass of spirit vinegar.

– Let it boil for 2 minutes then drain the tongue (do not keep the water)

– Return the tongue to the pan after changing the water. Wet at height.

– When the water is boiling: add the onion, the four-spice mixture, the remaining glass of vinegar, the stock cubes and the bouquet garni, finally add the salt and pepper.

– Leave to cook for at least 2.5 hours (a well-cooked tongue with peeling skin)

– Reserve the broth.

Preparing the “hot” sauce in a high-sided saucepan or pan

– Melt the butter and brown the chopped shallots

– Once the shallots are colored, add the flour and stir well for 3 minutes.

– Pour in the blended tomato or tomato paste and add the white wine while stirring.

– When the mixture thickens add the mustard and pickles. Taste and adjust seasoning.

-Once your tongue has stripped of its skin, slice it and cover with sauce.
