Beef bourguignon: Alexandre Giesbert’s recipe

Alexandre Giesbert's beef bourguignon.

Ingredients for 4 persons

  • 3 beef cheeks, peeled and cut in half
  • 4 onions
  • 2 carrots
  • 5 cloves of garlic
  • 1 sprig of thyme
  • 1 stalk of celery (optional)
  • 200 g button mushrooms
  • 2 large slices of bacon
  • 70g butter
  • 2 tbsp. to s. of flour
  • 1 bottle of good red wine
  • 1 l of chicken stock, made with the remains of a roast chicken (failing this, 1 l of water)
  • olive oil
  • salt pepper

The preparation

Peel the onions and cut them into 8. Wash the carrots, cut them into sections. Peel and crush the garlic cloves. Cut the celery stalk into 2 or 3. In a cast iron casserole dish, over high heat, pour a drizzle of olive oil and add 20 g of butter. When the butter begins to foam, lower the heat and add the beef cheeks, browning them on all sides.

Remove the cheeks from the casserole and add the onions, garlic cloves, thyme, and celery. Brown for 5 minutes over low heat. Add flour and mix well. Return the meat, pour in the wine and add the broth to the top. Bring to the boil, cover, then cook for 3 hours in the oven at 200°C.

While cooking, cut the bacon into sticks; clean the mushrooms and cut them into 4 or 6. In a pan over high heat, brown the bacon, then the mushrooms quickly. To book. Take out the casserole, remove the beef cheeks, pass the rest through a strainer, collecting the broth well. Remove (and discard) the thyme, bay leaf and celery, reserving the rest of the vegetables.

Return the broth to the pot, bring to the boil, reduce until syrupy. Incorporate the rest of the butter, mix over low heat using a wooden spoon. Return the beef cheeks, carrots, onions, bacon and mushrooms to the casserole. Reheat for 5 to 10 minutes. Serve with mashed potatoes.
